Description: Japanese-American hibachi restaurants like Kobe's have a tradition -- the chef, instead of being hidden in some steamy fluorescent-lit kitchen, is the star of the show. The dinner experience consists of part food, part showbiz because the diners are seated in groups around a large silver griddle. The chef deftly chops up a dizzying array of broccoli, onions, carrots, snow peas and other goodies, and quickly stir-fries them up before ladling them onto your plate. After that he prepares the chicken, shrimp and steak entrees with a bit of sauce for juicy flavor.

Description: A lovely restaurant near the airport, Chinese Garden has four different Chinese cuisines and a veritable greenhouse of exotically festooned Lucky Bamboo plants. Right inside the door, diners are greeted by a tiered wall filled with dozens of beautifully potted bamboo plants whose manicured shoots twist and turn, dripping with tiny Chinese lanterns and small brightly colored birds tied to the stems. All the plants are for sale and range in cost from about $25 to several hundred.

Description: They call the cuisine "upscale global" and that's a pretty good name for this eclectic, flavor- packed food. The all-over-the-map menu was designed by Nashville culinary doyenne Deb Paquette, who later opened Zola. The room looks like it was decorated by Salvador Dali and every corner vibrates with some small treasure: a fresco, a pretty light fixture, an unusual piece of art and an upstairs bar worth a visit just to check out the Arabian Nights motif. The menu is packed with delights scavenged from the remote culinary corners of the globe, often tempered with a southern regional touch.

Description: The weathered neon sign hanging above the green-and-white striped awning is the first clue that Rotier's has been easing Nashville's hunger pangs for more than half a century. Inside, the knotted-pine paneling, booths, beer signs and televisions make the dining room look like a bar, but the vibe is more family-friendly. Parents know to bring the kids for milk shakes and homemade chicken fingers.

Description: Since 1974, plenty of old money has passed through this classic steakhouse and pub. Many Belle Meade residents have enjoyed the salad bar, seafood and signature steaks on a regular basis since the eatery's opening. Lots of dark wood and leather and an immense fireplace lend a timeless and manly look to the decor. Sperry's dining room is generally filled with well-dressed, distinguished looking folks who all seem to know each other. Entrees are generous, so don't be surprised if you leave with a doggie bag.

Description: Hidden between a Super 8 motel and a Knights Inn on the north side of Bell Road, this restaurant is something of a pleasant surprise. Housed in an unexciting beige building with green trim, you'll be amazed by the extensive cactus garden out front. Inside, the restaurant is covered with Mexican flags, clothing and tiles, and a mural of Mexico adorns one wall.

Description: This expedition in fresh food and kitschy jungle decor has been a delight of the Rivergate area for years. Complete with lush foliage and a 3,500- gallon aquarium, Safari's serves marinated beef skewers, salads, fajitas, steaks and pasta in a pith helmet atmosphere. Owner and head chef Ross El-BoBou prepares the food fresh daily, from the deep-fried Malawi mushrooms to the signature jungle salad, a confection of mixed fruit, shredded coconut and yogurt or cottage cheese topped with rum sauce in a pineapple boat.

Description: Why do so many people flock to Sitar? It could be the chock full of fruit chutneys, tangy tandoori and notable naan bread, or maybe it's the simple but elegant atmosphere, great location and solid selection of foods that made Indian cuisine famous. In addition to the tandoori chicken, Sitar makes wonderful papadum, crispy lentil bread, rice, mint and onion chutneys and other dishes that take full advantage of the colorful flavors of India.

Description: While only a few blocks away from West End Avenue's chain restaurant homogeneity, ZOLA makes diners feel they've been whisked away to an unknown -- and extremely flavorful -- Mediterranean isle. Owner and chef Debra Paquette draws heavily on Spanish, Italian and French cuisine as the basis for her menu, marrying those foods with a Southern bent to create a fusion of down-home and abroad, all on the same fork. Appetizers are fittingly renamed "Provocations" on Paquette's menu, and most entrees can be prepared for vegetarians as well.

Description: Chef and owner Luis Fonseca creates light, authentic Italian cuisine that natives of the region would be proud of. Basante's uses a light hand in their recipes, unlike the Italian/American chains that like to drown their pasta in oil, cheese and sauce. The salad of mixed greens is lightly tossed with a lemon dill vinaigrette. Fresh, steaming bread is brought to the table with a sample of olive oil. Entrees include generous portions of pastas, fresh salmon, a marinated pork tenderloin with port wine glaze, breaded veal cutlets and potato dumplings with pancetta basil tomato cream sauce.
